Inspired by Frost Me's post about Memorial Day (thanks Kim)....and her post from Cake Spy, I decided to make my own festive cookies. The recipe for the cookies and icing on Cake Spy sounds delish!!! I, having little patience, made my own cookies (read - breaking apart the packaged ones from the grocery store) and opened my own can of frosting (there, I said it)! I mixed some old school Pop Rocks with sprinkles I already had...
voila - Firecracker Cookies (clever name..not so much - but it fits)!

do the poprocks no longer 'pop' because of the moisture in the icing???
The Pop Rocks crackle when you put them in the icing/frosting (which my 2 little ones LOVED) & still crackled when they ate them. I'm not sure how 'poppy' they would be if you left them sitting too long??

I found this through Pinterest; thank you! I tried it on cupcakes for the 4th yesterday, and they worked great. The only thing is, keep them in the fridge as long as you can (or wait to put the pop rocks on until the last minute) and the pop rocks will be fine. Otherwise, after about half and hour to an hour of setting out, the pop rocks sorta melt. :-/
I tried this on cupcakes, but sadly the Pop Rocks do not last long at all. I waited to frost the cupcakes and add the firecrcaker topping until about 2 hours before we needed to eat them and the Pop Rocks were all melted by that time. Creative idea, though! I wish it would've worked better!
