Pumpkin Spice Stuffing bites (& a giveaway)

Now that Halloween is over, I'm starting to think about Thanksgiving. 

I don't know about you, but Thanksgiving = FOOD in our family (and lots of it).  
I was recently given the opportunity to create a Thanksgiving veggie side dish 
using Country Crock Pumpkin Spice spread.   
Veggies help complete a well-rounded, better-for-you Thanksgiving meal, 
and Country Crock helps make them even more delicious.
I chose to make stuffing because, at Thanksgiving, stuffing is one of our veggies.
{Let me tell you, I could eat this stuff straight out of the tub!!!}

There are so many different variations of stuffing. 
Every family has their traditional Thanksgiving favorite.
For my side dish, I chose to add a few fun ingredients to simple cornbread stuffing.

Any type of stuffing would work with this recipe.

 I chose store bought for convenience.  
Once the stuffing was mixed with the water and Country Crock Pumpkin Spice spread, I added in a handful of cranberries and almonds.

Now the fun part, use a tablespoon or so of mix to fill a mini muffin pan.  
 I put these into a 350 degree oven until the tops were a little crispy. 
(and so they would hold their shape).

I love how they are the perfect little bites of yumminess!   
The Country Crock Pumpkin Spice spread gives them such a great hint of pumpkin spice.  The flavor works really well with the cranberries and almonds too.

I plan on using the Country Crock Pumpkin Spice spread 
when I make mashed sweet potatoes too :)

Those stuffing bites look great! I'll have to add them to my list of side dishes this year. My favorite Thanksgiving side dish is broccoli and cheese. Even if I didn't have any other side dishes, the turkey with the cheese sauce and broccoli makes my Thanksgiving dinner!

Those look so good! I love that they are individual sized too...great for portion control! I love my grandma's sweet potato casserole with marshmallows on top!
