cupkie??

As soon as I saw this recipe from cake spy - I knew I had to try it!  
It's just makes sense...cookies inside of a cupcake - GENIUS!
I didn't have to look far to find the fixin's....Funfetti cake mix, pull apart and bake cookies.
I was in business!!

I went for giant cupcakes (that was a mistake, in my opinion) 
& mini cupcakes (my idea of portion control - haha).  
Since I 'cheated' and used the goof-proof cookies...I plopped one square in each cup.  
As you can imagine..the giant ones were too big for the cookie dough.  
The mini ones were too small.  
My thinking is that the regular cupcake size would be juuuuussst right.

They are still just as tasty but I want to perfect the cupcake to cookie ratio.  
I'll give them another try next week...in the meantime, I'm enjoying my 'mistake'  :)
